Rich Chocolate Raspberry Ice Cream
There's nothing like a rich chocolate ice cream on a hot Summer's day. This fantastic tasting ice cream is easy to make and has a subtle raspberry twist.
Ingredients
- 250g milk chocolate
- 100g unsalted butter, cubed
- 150g caster sugar
- A handful of raspberries (between 10 and 20)
- 150ml water
- 500ml double cream
- 4 egg yolks
Recipe
- Bring a medium pan of water to a simmer over a gentle heat, and place another pan or shatter-proof glass bowl over it. The pan or bowl needs to be above the waterline so you may need to tip some water out
- Break the chocolate into squares and put in the bowl
- Stir the chocolate until silky and completely fluid
- Stir in the butter until it melts completely, then remove from the heat
- In another pan, dissolve the sugar in the water over a low heat to begin with, then turn up the heat to form a syrup. Make sure the syrup isn't tinted any colour. If it is, you have burnt it
- When it's ready, remove from the heat
- In another bowl, whisk the egg yolks (use an electric hand whisk) then blend in the hot syrup (be careful, it's deceptively hot)
- Continue whisking until the mixture is similar to the texture of chocolate mousse
- Add the cream and whisk
- Then fold in the chocolate by hand
- Once the mixture has been blended well, add the raspberries and stir a couple of times to distribute theme evenly. Too much stirring will cause the raspberries to break down - we're after pockets of raspberry.
- Pour the mixture into an ice cream maker and churn. If you don't have an ice cream machine, put the mixture in a freezer-proof plastic container and put this in the freezer. Stir with a fork every half an hour to prevent large ice crystals forming
