Rich Chocolate Raspberry Ice Cream

There's nothing like a rich chocolate ice cream on a hot Summer's day. This fantastic tasting ice cream is easy to make and has a subtle raspberry twist.

Ingredients

  • 250g milk chocolate
  • 100g unsalted butter, cubed
  • 150g caster sugar
  • A handful of raspberries (between 10 and 20)
  • 150ml water
  • 500ml double cream
  • 4 egg yolks

Recipe

  1. Bring a medium pan of water to a simmer over a gentle heat, and place another pan or shatter-proof glass bowl over it. The pan or bowl needs to be above the waterline so you may need to tip some water out
  2. Break the chocolate into squares and put in the bowl
  3. Stir the chocolate until silky and completely fluid
  4. Stir in the butter until it melts completely, then remove from the heat
  5. In another pan, dissolve the sugar in the water over a low heat to begin with, then turn up the heat to form a syrup. Make sure the syrup isn't tinted any colour. If it is, you have burnt it
  6. When it's ready, remove from the heat
  7. In another bowl, whisk the egg yolks (use an electric hand whisk) then blend in the hot syrup (be careful, it's deceptively hot)
  8. Continue whisking until the mixture is similar to the texture of chocolate mousse
  9. Add the cream and whisk
  10. Then fold in the chocolate by hand
  11. Once the mixture has been blended well, add the raspberries and stir a couple of times to distribute theme evenly. Too much stirring will cause the raspberries to break down - we're after pockets of raspberry.
  12. Pour the mixture into an ice cream maker and churn. If you don't have an ice cream machine, put the mixture in a freezer-proof plastic container and put this in the freezer. Stir with a fork every half an hour to prevent large ice crystals forming
