Chunky Triple Chocolate Cookies
Treat yourself to a warm, soft and chewy chocolate flavoured cookie crammed full of chunky cubes of white chocolate, milk chocolate and dark chocolate.
Ingredients
- 90g milk chocolate
- 90g white chocolate
- 300g dark chocolate
- 90g unsalted butter, diced
- 5ml vanilla essence
- 150g brown sugar
- 150g self raising flour

li>Preheat the over to 180°C (Gas mark 4, 350°F). Line 2 baking sheets with greaseproof paper
- Mix the ingredients
- Roughly chop the white and milk chocolate, making large chocolate flakes
- Take 200g of dark chocolate and cut into large chunks of around 1-2cm square
- Bring a medium pan of water to a simmer over a gentle heat, and place another pan or shatter-proof glass bowl over it. The pan or bowl needs to be above the waterline so you may need to tip some water out. Melt 100g of dark chocolate in the pan or bowl.
- When the chocolate has melted, take off the heat and stir in the butter. When that has melted, add the sugar and vanilla essence
- Add the flower and mix gently
- Add all the remaining chocolate, and mix gently
- Split into 12 dollops on the baking trays, leaving a large gap between each of the cookies
- Cook for 12 minutes or until they are just starting to colour
- Serve warm for the best taste!
